Hola Caballeras! My apologies for going MIA the past 2 weeks. I've been keeping notes on Day 2 through 15 and I'll catch up this weekend but wanted to get this out there tonight since it's been so long and I promised daily updates.

So tonight's dinner was more huevos! :) I {heart} eggs ... especially poached or gently fried sunnyside up. Over just about anything. Quinoa, rice, sautéed kale, avocado on toasted corn tortilla Loop app android, you name it!

This time sunny side up over quinoa with ... are you ready for it ... red pepper, black beans, green onion, cilantro, lime juice, jalape?o, cumin, paprika and ... are you sitting down ... sautéed cherry tomatoes and feta! So. Freaking. Good!

The thing that is so cool is that the stress level yesterday and today has been revving at about 6,000 RPMs between 6am work calls that continue back to back till early afternoon every day, the 500 emails sitting unread in my inbox, and batshit crazy meth addict plumber threatening to come to my house and break my legs (more on that later), that normally I would have immediatley done a faceplant in a trough of garlic fries or hightailed it to  jack-in-the-box for a supersize of curly fries and jalapeno poppers or inhaled a pizza out of comfort food desperation or downed a case of wine. But this time I didn't.

I don't know if I was too stressed to eat - a phenomenon that, much like Haley's Comet, has only occured once in my lifetime at a previous job as it was starting to implode - or that I am just so much more aware of what I am eating and how every bite matters, just as every day matters. Every fucking day actually ;) but I digress...  

When I automatically gravitated toward the fridge,  I was able to stop and say to myself, "OK, you are not really hungry, just off the charts anxious. Going to Jack-in-the-Box is just going to make you feel so much worse after, you need to nourish and take care of yourself right now smartone." And then I was able to grab for a small handful of nuts and dried fruit mix, about a 1/4 cup that turned into half a cup but that's ok. It's a much healtheir way than how I'd have reacted in the past and ...

Waddya know... it took the edge off. Some fat and salt from the peanuts, the chewy and sweet from the dried fruits. It worked. Yaaaay! Another small win to celebrate. I might not be able to resist next time but I did today, under wackadoo circumstances, so gold star for me :)

Southwestern Sunnyside Ups

quinoa - I usually jsut make the whole package, about 12 oz
♪1/2 red pepper, 1" slices, sautéed
♪1 cup black beans (I used Progresso canned)
♪3 green onion, sliced
♪1/4 of a small (2") jalape?o, fine dice, sautéd
♪a few shakes of cumin (add to your taste, I happen to love cumin)
♪a shake of paprika
♪juice and zest from 1 lime
♪1-2 tablespoons good olive oil, sea salt, fresh ground pepper
♪20 cherries tomatoes, cut in half and sautéed  
♪about 1 oz feta, 1/4" dice
♪leaves from a few sprigs cilantro

♪1. Make quinoa according to package.
♪2. While the quinoa is cooking, sauté the peppers separately
♪3.  Mix them all together one at a time: the quinoa, peppers, onion, beans, paprike, lime juice and zest, olive oil, salt and papper.
♪4. Sauté the cherry tomatoes until starting to caramalize. Add in the quinoa mix and cook to warm the quinoa.
♪5. Add the feta and stir.
♪6. Over medium heat, crack open the two eggs gently over the quinoa mix - you might need to use the shell to maneuver the yolk to stay on top Private Cloud. Cover and cook to your desired doneness. I like the yolks super runny so when you poke them, they become an unctuous sauce oozing over the eggs white and through the quinoa.

Slide onto a plate and enjoy! Buen provecha caballeras!
